Fairmont Mumbai and Roswyn, A Morgans Originals Hotel, Announce Strategic F&B Leadership Appointments

In a move to redefine the culinary landscape of North Mumbai, Fairmont Mumbai and Roswyn, A Morgans Originals Hotel, have announced key leadership appointments within their Food & Beverage departments. This strategic reinforcement comes as the dual-branded Accor complex aims to synergize the timeless grandeur of the Fairmont brand with the avant-garde, lifestyle-driven ethos of the Morgans Originals collection.

The new leadership team will oversee a diverse array of dining outlets, ranging from high-concept signature restaurants to expansive banquet operations designed for Mumbai’s elite social and corporate circuits.

Strategic Focus & Key Objectives:

  • Dual-Brand Synergy: The appointments are designed to create a seamless yet distinct culinary identity for both brands. While Fairmont focuses on “Grandeur and Classicism,” Roswyn will lean into “Experimental and High-Energy” dining experiences.

  • Menu Innovation: A primary mandate for the new F&B leaders is the introduction of global Gastronomy trends, including zero-waste cocktails, farm-to-fork sourcing, and interactive “Chef’s Table” concepts.

  • Event Excellence: Given the complex’s massive ballroom and outdoor spaces, the leadership will focus on elevating the MICE and wedding catering experience, offering bespoke, multi-sensory menus for large-scale gatherings.

  • Sustainability & Wellness: Aligning with Accor’s global “Planet 21” commitments, the team will implement local sourcing initiatives and introduce a “Wellness-First” menu segment across both properties.

The Management of Fairmont Mumbai & Roswyn commented: “We are entering a transformative phase for our F&B operations. By bringing in leaders who understand both the legacy of the Fairmont name and the disruptive nature of the Morgans Originals brand, we are setting a new benchmark for luxury hospitality in Mumbai. Our goal is to make this complex the city’s ultimate culinary destination.”

The announcement follows the successful soft-launch phase of the Roswyn property, which has already gained traction for its rooftop lounge and eclectic design. With this new leadership in place, the complex is poised to compete aggressively in Mumbai’s highly contested premium dining sector.
